Pineapple Raita is one of my favorite side dishes ever and the bonus is that kids love it too. The sweet yet savoury taste of this dish balances out the flavor of any meal, its cool disposition is perfect for summers and is very refreshing for your palate.
It is also an extremely easy recipe which you can prepare within a few minutes with only a few ingredients. So if you have guests dropping in unannounced and want to add a quick and easy dish to your meal, pineapple raita is a safe bet. In our house every time I have prepared this dish for a dinner, I have got heaps of compliments for its restaurant quality and the bowl is always left completely empty. (As a cook, that is the best compliment right?)
So without any more build-up I will introduce you to my take on the Pineapple Raita.
2½ Cups of Yoghurt (It is better if you use store-bought one as it is thicker than the one we set at home)
2 Cups Chopped Pineapple, I used Del-Monte Pineapple Slices (There is another benefit of using the canned pineapple which I will tell you soon)
1/2 Tsp of Red Chili Powder
2 Tsp of Roasted Cumin Powder
2 Tbsp of Sugar
1 Green Chilli (chopped fine)
1/2 Tsp Salt
Mint Leaves for garnishing (chopped fine)
Chop the canned pineapple slices into small pieces.
Whip the curd with sugar till its smooth.
Add all the spices, green chili and salt to the curd.
In case you find the curd is thick or sugar is less, then add the syrup in pineapple can to the curd. (Told you, there was another benefit of canned pineapple) and mix it well.
Add the chopped pineapple pieces
Cover the bowl with cling foil and keep in the refrigerator to chill for 1 hour before serving.
Now garnish the curd with mint leaves.It goes really well with spicy food like Chilli Paneer , spicy chicken etc.
